Well of course as you know the various dialects around the country mean that words are changed and mangled to suit the local tongue. In Bavaria people say "passt scho" which one can't translate into English but means "don't worry about it" or "no problem". In fränkisch it's "bassd scho" because p's are often pronounced as b's and t's as d's. Hannovarians wouldn't say passt scho. Another example is "sieht es" which literally means "see it?" or as we would say in English "you see (I was right). In fränkisch it's pronounced "sixtes". 

In terms of grammar yes I would say most people use the grammar correctly - they were brought up with it so even though it seems tough to learn they didn't have to, so it's no more difficult for them than English to us. Of course sometimes people bend the rules to suit their needs. 

Only the other day I was talking to someone here and I mentioned "weil" - because. When you use "weil" the verb always goes to the end e.g. Ich bin müde, WEIL ich gestern so spät zuhause gekommen BIN". He had to think about it for a while, because he never learnt it as a rule. As a non native I can understand some people better than others. 

It really is fascinating.
