Incomplete fermentation is definitely an opportunity for chemicals to be present that might cause a headache. Port is the best example. The fermaentation of the wine is forcably stopped after three days by the addition of alcohol. This fixes all kinds of partial ferment chemicals into the port. My advice, drink Sherry instead.
