| I've done a good couple. Roppelt is certainly my favourite. The average age is 60+ and everyone is drinking either from the bottle or taking a big sip from the Jungbier while cleaning and filling. Here you're doing it all yourself! It's quite an experience and after having done a couple, I now put it aside for 4 weeks at ~9 degree without degassing and deal with the massive pressure when tapping. Been loosing a liter or two regulary (and it can be a mess) but mostly ended up with a drier beer than Roppelts own. Absolutely glorious! Stefans produces a bit more sulphur, in memory. I'd ferment that a far cooler and possibly vent it in between. |
