Joris I think you are mistaking this forum of drunks discerning drinkers, as a bunch of brewing science boffins!! :)  Jokes aside, though we do have at least couple of brewers on here (I'm sure Andrew H would tell you whatever you need to know about British brewing), that's a pretty forensic question. I have no idea. Franconian brewers are very private. I will ask a friend of mine who might know.  If you don't get any help here, Matthias Trum of the Schlenkerla brewery might be able to help you if he has the time.
