Coolships

Samuel Smith is the only operationg brewery (afaik) that is still operating Yorkshire Squares. But as mentioned in the great post above - it's critical to understand that coolships/coolers aren't fermentation vessels. That's a common misunderstanding especially in the US. The shape of open fermenters can be similar, but their function and their environment is very different. Yorkshire squares are unique as it is a fermentation and cleansing system in one!
