Aye to the Holzfass issue; these are all lined somehow, there's no bare wood like in a whisky or bourbon barrel. (I forget if we capitalise 'bourbon'.) Pitch or plastic, I don't know. I first noticed a big variation in the Kellerbier at the Keller a decade ago, when it was suddenly less hoppy and bitter. This coincided with a drastic rise in hop prices back then, and it was speculated that brewers in general were cutting back. A secondary effect was an increase in butterscotch and apple notes, which presumably had previously been beaten into submission by the big hopping. Then it got better again after a year or so, more or less back to the way it had been pre-2007. Ever since then, it's varied some; every time I visit it's different, but is always loaded with character. It can be nice and rough, it can be somewhat less rough. Rustic, maybe, rather than rough. If you like it at the Keller, you'd have hated this bland stuff. Your perception that maybe it had gone downhill is a fair one IMO. Landbierparadies only put Holzfässer on their bars, no normal Bauchfässer. One might call it a gimmick. It's a nice gimmick though. Hecht Dunkel was another disappointment the other day: cola-like spritziness with quickly-disappearing head, very little roasty or other desirable "dunkel" character. |
