Ok, just go to Forchheim on Monday.  It's an easy trip from Bamberg by train and you can sample beer from 4 different breweries - more than 4 because there's that cafe that Jason discovered with beers from Drugendorf (?), can't remember though we did go there, so will have to try again.  Actually, a few more because there's a few other pubs around the town, if you're so inclined.  It's also a beautiful place and easy to walk around.
