Have you tried Airbnb? Last time I looked there are a few places in the centre but most are the other side of the railway station. You could also search 'Ferienwohnung Bamberg'. Bamberg has a shortage of hotel rooms and is often very busy at weekends. Not sure if there is a backpackers hostel type place.
