Gastwirtschaft. Not exactly "pub", but then pubs really only exist as such on the British Isles IMO. But even British pubs will sometimes have closing days. My impression has been that the closing allows for employees to have a predictable day off, and as Jason says, these places just don't need to worry about the lost revenue on those days. I'd never thought of it as having to do with how much of a gastro/brewery business the places consider themselves to be. Schlenkerla used to close on Tuesdays, FWIW. (Or Weds?)
