And outside of a few pockets in the NE US, the pre-prohibition brewing culture in the US was basically German (or German speaking) which meant lagers. Before industrial CO2 I'm they were served much the way Schlenkerla and others do today. Another consideration is how spread out and sparsely settled the US was (again, outside of the NE) It is all well and good to say "brew only for the local market" but that might not be able to support a brewery. As for the mega-tap places, I agree that beyond a certain point it is silly, but it can be done well. The Taco Mac chain in the Atlanta area is my favorite example: they carry lots of local beers and turn them over fairly quickly so there is always something new to try yet they have a big enough range that anybody who drinks beer can find something they like (or tolerate). I have been to more places than I can count that have 30+ taps and nothing to drink |
