Gassy Pils

Google for "7 minuten Pils" and you'll see that it is an old, widely-held superstition. The Deutscher Brauerbund explains that it's wrong; a good Pils should only require *three* minutes!

Anyway, I mean that for whatever reason, Pils (yes, northern German, not Czech) has been served more highly carbonated for a long time out of tradition. Your point that Franconian Pils ought not to necessarily be the same is good though.
