However, last night, I was told that an unspecified brewer is now skipping this step. The barley is now put straight into the sud pfanne, heated and then the mash transferred to the maischbottiche, as there is no filter system in the sud pfanne. After filtering, the wort goes back to the sud pfanne for cooking, during which, leaf hops are added. This brewer has bought his own grain mill, which is claimed to be much more efficient than that of the brauhaus - hardly surprising, as the brauhaus mill is a 19th century device! This added to superior quality grain is the argument for skipping the double mash. Is this now an infusion process? I suppose the proof of the pudding is in the end result, I'll give my opinion after drinking! |
