A couple of observations

Yes, the mash goes into the maischbottiche, then lautered, and the resulting wort is pumped into the sud pfanne.  As it is then boiled (or at least taken close to boiling), is this a decoction process rather than infusion, even without the double mash?
Essentially, they are trying to use 21st century techniques in a 150 year old brewery!
