Usually the prior train is only 30 min or 60 min earlier. I am not sure of the official DB policy, but I know that I have personally ridden an earlier connecting train (RB) from Bamberg with no problem when I showed my ticket to the conductor.

You probably already know that the tracks are such: 2&3, 4&5, 6&7, 8&9, and 10&11. So, if your arriving train and departing trains are on the same platform, you can transfer in minutes.
