Carageenan and similar clarifiers are "allowed" because they don't remain in the finished beer - which is also why yeast is "allowed." Anything made from hop sources or malted barley sources, like hop extract oil or Sinamar, is still considered "hops" and "malted barley." And of course, since the modern law covers both bottom-fermented and top-fermented beers (the 1516 sentence in the Bavarian decree was meant for lagers), top-fermented beers get to use other malted grains, and they do: spelt, wheat, rye, etc. Hey, when is Camba Bavaria abandoning Bavaria and moving across the border to Austria? |
