Can't specifically recall aged unfiltered Kellerbier, but other beers have gone paper-y (oxidation) and then sometimes also gushy when aged too long. I used to collect Winterbock and compare them: fresh, one, maybe two years old. I stopped doing that, as it was always disappointing. Why beer can sometimes become a gusher when aged too long...? Normally we associate gushing with infections.

Whereas barley wine or other strong ales *can* age nicely, Bock never did IME. As MJ...Michael Jackson, that is...said, "If you see a beer, do it a favour and drink it."

[*Dons Englisch-Sprachtrainer hat*] Note the adjective form of Franconia in English is "Franconian". In German, it's "fränkisch" or "fraenkisch" in the absence of a proper umlaut character.
