No, what I meant, but didn't express clearly, is that I think a brewer might make an experimental beer (say, coffee stout) just because they're interested in seeing how such a beer would come out. Not necessarily out of the idea that they could make more money off it than a coffee-free stout. Why you two don't seem to think that this could be their motivation is what I don't understand.

I prefer not to think about Mallinson's doing KeyKeg at all, if you don't mind! Their one 4% ale (Simcoe?) was one of the absolute standouts of the dozens I tried at the Mancunian Beer & Cider Fest in January, FWIW.
