Up until a few years ago -- when they expanded into the building next door -- Uerige fermented quite warm -- around 70º F (20º C). This was because primary fermentation was their bottleneck and they needed to move the beer thru quickly. This was followed by about 6 weeks of cold conditioning -- needed in part, I'm sure, to clean up the beer after such a warm fermentation. Füchschen doesn't ferment quite so warm, but I'd guess it is probably in the neighborhood of 60º F (15º C) -- but that is a guess as I didn't have a thermometer with me I have no information on Kölsch fermentation temps but I've heard they are similar (up to 15º C) |
