Ha-ha. No, it's not quite that traditional there. The pigs are indeed raised in the barn across the Hof from the brewery, but then are slaughtered in Bamberg at Franz Roppelt's brother's butchery. I haven't asked Franz if it's true, but others have told me he doesn't want slaughtering done on site because he loves the pigs too much. At the brewery in Büchenbach, they have their own slaughterhouse, and the butcher down the street makes the Wurst. It varies in Franken, in Germany, because of EU regulations that have tightened control on slaughtering, it's not done on site as much as it used to be done. I'm sure every other EU country adheres to the regulations EXACTLY to the letter of the law! :) |
