| There was a bit of discussion at ratebeer about Franconian breweries that actually do barrel-conditioning, adding fermenting wort to the barrels. As opposed to the common way of filling them with "bright" beer that has already been lagered in a tank. But now I can't find the discussion, and I'm wondering if anyone knows of breweries that really do this. So...anyone? Michael? |
