Yes I think that it is risky to freeze fermenting wort, as with it you are: 1) damaging yeast cells so they die and could not do any other work, and 2) putting too big stress to yeast cells before they die, so they could try affect the wort flavours etc. So I have freeze it BEFORE I put yeast into it for the first time. As far I know, many homebrewers do it in this way. and I wanted to have bigger chance that there will not be any wild bacteria etc (which could actually ferment even at 5°C or so). |
