I've been racking my brains to remember our (Don S. and the Seattle brewers) visit to Weyermann, a couple of years back. I don't recall any mention of making malt for Rauchbier but, then, we didn't ask - or, at least, I didn't. As Fred commented, wouldn't smoking malt require wood and, also, facilities apart from the usual kilns? I can vaguely recall the kilning process (huge vessels and lots of heat) but don't remember seeing any special wood burning facilities. But, by the time that we got to the kilning, I was too busy thinking of the experimental brewery and the upcoming sampling! |
