Oh yeah, for Schlenkerla Helles, yeast really does matter, and therein lies the tale. We had a great little session with Matthias Trum last year at the Schlenkerla tavern, and I asked him directly about the Helles, and which had the most effect on the beer's "ghost smoke" character. Yes, the brewery's equipment is part of the story. The other part is the house's own yeast strain, which apparently has mutated to contribute a slight smoke phenol to the ferementation process. That yeast is proprietary. Another Franconian brewer's yeast might approximate part of the character, but Trum asserts that using the house yeast + the brewery's own systems is pretty much the only way to get actual Schlenkerla Helles. Everything else will be a very nice approximation. |
