Gas mixes for kegs

In the Café Abseits we use not CO2 but a mix of CO2 and Nitrogen N2, p.e. the brand Aligal Nr. 13 - from Air Liquide.

30 ± 3 Vol.% CO₂ in N₂

I think that most beer bars in the US have been using a mix of approx. 60% CO₂ and 40% N₂ for a few years now. This mix is good for general ales and lagers. The higher N₂ mix is better for stouts or when you want a "creamy" mouthfeel.
