Extract versus full mash |

I have heard that some brewers believe that beers made from extract can be just as good as beer made from whole grain. Personally, I am very skeptical of this. In my limited experience, beers made from extract have seemed to be lacking in some way, but I have not had many opportunities to try the "same" recipe made with extract and whole grain side by side. I find it hard to believe that commercial Franconian brewers are using malt extract, except perhaps as a portion of the fermentables, with the majority coming from grains. |
