It's not unlike frozen vs. canned vegetables, IMO. Who among us would say that either is exactly the same as fresh? But frozen do retain more of the character of fresh vegetables than canned do...at least IME. Would I NEVER use canned? Of course, for certain things. I have indeed used pellets for bittering, but not aroma or flavour hops. If I lived in Düsseldorf, I might indeed go beg some yeast off of Uerige & Co. If I brewed lager, I might also head to Kitzmann, as their beers are pretty clean...but I brew ale, and like with malting my own grain, it just ain't practical to not use packaged yeast. I used to use liquid yeast back before the new, better dried ones came out. Lots of extremely proficient professional brewers use hop extracts and colouring agents, are you going to go that route? |
