Homebrew Twang

I meant to put in a word or two about what I mean when I use the term. I use it to describe two different aroma/flavour issues. First, and this is what I found yesterday, is a sort of "instant coffee" note, for lack of a better term. (Might be related to phenols?) Second, a sort of sharpness, sort of like sucking on cedar bark might be like. This I didn't find there yesterday.
