Regarding Hacker Pschorr, there are a couple of places I've visited. The one that definately has the Helles on gravity is the larger, newer beer hall that I vaguely recall being somewhere near the Vicktualenmarkt (spelling?): http://www.hacker-pschorrbraeu.de/ Then there is the smaller, older, quantier Altes Hackerhaus also somewhere roughly near the zentrum: http://www.hackerhaus.de/ I don't know if the latter serves the beer gravity or not. I didn't look and didn't ask. I've had dinner at both places and preferred the atmosphere of the Altes Hackerhaus to the other place but both were good and I enjoyed the beer at both even though it doesn't blow the socks off.
