Lagering for Annafest

I was never a big fan of Eichhorn when at the Gaststätte but the Blümleins version just blows me away. I think that is why most American "craft" lagers aren't exceptional -- they can't afford to lager an "ordinary" strength beer for 8 weeks -- and I think the open fermenters used in Germany help make a cleaner beer.
