Not sure what is meant by a homebrew twang. I didn't note anything odd about your beers, Nick - apart from the unusually high quantity of hops! Likewise, I think my beers are quite close to commercial brews. I think there is a vast improvement in home brewing from my early days, using Tom Caxton kits in the 1970s. Presumably, much better yeast and malt extract? Incidentally, the breweries in Windisch and Neuhaus are both wood-fired - no homebrew twang there.
