Too much "gas"?

I personally don't mind if they "gas up" a barrel prior to serving by gravity. Once the barrel starts pouring, the extra CO2 should start to out-gas from the beer/barrel since the whole system will be at atmospheric pressure. I think this is quite different than from a keg which has CO2 pressure pushing the beer to the tap.
