You can distinguish between the "Bayerischer Anstich" and the "Münchener Anstich": The Bavarian Anstich (also called: Siphonanstich) works with a rubber seal. The Munich Anstich has a piece of wood ("Schrödel") in the hole. The middle part of this "Schrödel" is smashed with a hammer. The Munich Anstich (also called "Oktoberfestansstich") is more difficult. You use a so-called "Federventil" on the top of the barrel. By this second hole air comes into the barrel. This avoid under pressure in the barrel.
