| Browsing the net, I found an interesting site for Hyde's Brewery, Manchester. In particular, the section on running a tenanted reminded me of the recent conversation with Nick. If you are proposing to take up one of their tenancies, you have to complete a business plan and they provide a template, which makes interesting reading for anyone thinking about going into the pub business.
