I knew I read that somewhere (I already knew about the allowance for sugar, but wasn't sure about Weizenmalz)...pity the source isn't a bit more reliable! The 5% Weizen in my recipes is for head formation/retention, and is also a tip from the cuckoo brewer in Sheffield. I actually brewed the half-IPA recipe with about 60% Weizen once, due to shortage of Pale Ale Malz, and it turned out interesting. Not great, not bad, just a bit different. Wouldn't do it again though. I'd forgotten that about Kölsch.
