You will find enough restaurants/pubs/brewpubs who will be open. But many close. So it is necessary to look for informations about the opening times. Many websites don't offer actual informations. So You should call before You walk/drive a long way to places in the country. In Germany the evening of the 24th December is the central time for the families (gifts/xmas tree). P.e. the Café Abseits has closed and the most other pubs. I recommend You the "Pelikan" in the Sandstraße of Bamberg. Nice atmosphere, good food (fusion food of Thai and Franconian ingredients), good wines, enough beers (Guinness, Huppendorfer Vollbier, Mönchsambacher Wheatbeer and some others), a great selection of spirits. At the 25th December also many pubs and restaurants have closed as the Café Abseits. On this day the most people eat together at home with their familiy and friends. But enough locations have open. You can find some opening times in the local newspaper of the 23th December (ads of the restaurants with special offers and openening times). Some restaurants/pubs also have closed on the 26th December. The Café Abseits open at 5 p.m.) You find our opening times in the xmas / end of the year season: http://www.abseits.de/jahreswechsel.htm At the 31th December many restaurants offer special Silvester-Menüs (higher prices). On midnight You can look a fireworks. The best place to look is maybe the Altenburg (but a steep, not long path to this castle). You can visit many cultural and other events. Look this calendar http://www.abseits.de/jahreswechsel.htm in some weeks (first days of December). P.e. Games of the Bamberg Basketball team, the German champion, concerts of the Bamberg Symphoniker etc. They offer a special xmas concert at the 23th September. For such events You should order tickets early. You can walk along the "Krippenweg", a round walk with the nicest places in Bamberg with crips (in churches, museums and on the streets and places. At the tourism service You an get a plan. All cribs: http://www.bamberg.info/erlebnis/krippenstadt/krippenwandern/ The locals like to visit stalls with mulled wine (and also belgian mulled beer) at the Obstmarkt, Grüner Markt and Maxplatz, close together. At Forchheim You can see the largest Christmas Calendar of the world (and many brewpubs). The Nuremberg Christkindl Markt is very commercial. But the old city is nice. You find the "Hüttn" with a good beer selction in the near of the Nurembourg Castle. http://www.ratebeer.com/p/huttn/9205/ In contrast to the Café Abseits You find there many beers from Mittelfranken (the region around Nuremberg). You doesn't need a car all days. But maybe You take a car on a weekend (low price) if the weather is good (without snow and ice) to make a roundtrip to small brewpubs or other places with bad bus connections. Other cities: - Bayreuth with the brewery museum of the Maisel wheatbeer brewery and the famous house of Richard Wagner. - Kronach (nice old city) - Coburg with the Feste Coburg and a nice museum. http://www.kunstsammlungen-coburg.de/ The brewery Grosch http://www.der-grosch.de/ has some nice beers (p.e. "Anno 1492″ which combines hops from the USA and Germany; the brewery exists since 1492, the year in which Columbus found America). - Forchheim with some brewpubs and the "Kellerwald", a hill with forest and in this forest are some pubs. - Kloster Vierzehnheiligen at Lichtenfels with the Klosterbrauerei Vierzehnheiligen, a private brewery behind the famous church Vierzehnheiligen (late baroque)
