Family-owned Franconian bakeries?

I personally wish these people could brew as well as they bake. (There, I've said it.) Not everyone knows that Germans are the world champion bakers. I certainly had to learn it first-hand. I can't really relate to your complaint, because I see Bäckereien and Konditoreien everywhere, though yes, most are chains. But even so, what they produce is pretty amazing...to me at least. Maybe a local (Gerhard!) can suggest something specific?
