In general, I think that's an excellent suggestion. 3rd week in May should avoid the dreaded Eisheilige! Actually, I don't think that it would be so necessary to specify a destination. As you say, transport to and from major towns is excellent but maybe Bamberg would be a good jumping off point for trips to breweries etc. Also, it might prompt certain Bayern residents to make the trip there - it's really great, honest!
