A fairly technical question arose during Wednesday's session up in the Forchheimer Kellerwald: Is the secondary or lagering tank fed with a blanket of CO2 for "traditionally-brewed" lager, i.e. ungespundet? My assumption is no. But then I assume it might also vary from brewery to brewery. AFAIK, traditionally, primary ferment will occur in open fermenters, then the Jungbier is racked to a secondary vessel for lagering. In the process, the beer should get natural carbonation, and then filled into barrels without any additional CO2. How accurate is that? |
