Your best bet is to get a VGN Tageskarte plus for €16.20 which is unlimited travel on the Nuremberg VGN network for 1 day for the 2 of you. You can take some children and a dog also if you so wish. This will cover your train ride from Bamberg to Nuremberg. You need to go to the Nord ostbahnhof to get the train to Weissenohe which is a few stops on the Ubahn from the main station(Hauptbahnhof). http://www.vgn.de/wandern/fuenf_seidla_steig/ This is a description of the walk, in German from the VGN site.
