But real ale can be dispensed for virtually no extra cost. I think that I said before about one of my favourite pubs,the Star in Bath, which sold draught Bass by gravity from small kegs situated on a table behind the bar. A couple of chiller blankets solved temperature problems. And, while they used cask breathers that added a small amount of CO2 to the beer, it din't seem to have any really noticeable effect. Probably the immersion period was too short. Also, the cost of real ale pumps is not very much - I saw a secondhand unit of two very nice pumps complete with cooler and fittings going for £180 - not too much to ensure a good product! Someone just needs to take a chance. The late lamented Biddy Early Brewery went to the trouble of brewing three types of beer: red ale (a bit of a nonsense that but still...), a porter and a pilsner-type beer but then dispensed them using a pressurised CO2 system. The result? A product that was largely indistinguishable from Smithwick's or Guinness or any proprietry Irish fizzy concoction. This compromise left no one happy.
