Depending on the extracts you're using, there may well be what I mean as "specialty grains" in there already, which can lead to your terminal gravity remaining high. Pale extract should probably not have much in there, but amber or dark...? My last two batches ended up with higher than expected TG's, up over 1.008 instead of 1.005-006. Not sure what's up with that. Today will be batch 78 or 79 (since Sep 2010), I think it will not be a pale ale for the first time, rather, a dry dark mild. Have some chocolate and dark crystal malts from England to go with the Weyermann pale ale. I guess I'll have to scale back on the hops though, from my normal 5 oz / 5-6 gallon (US) rate. That will be strange. |
