I have visited Bamberg over US Thanksgiving Week the last the last 8 years. Usually I return home on the 27-30. Only once in those 8 years was there measurable snowfall that persisted for a day or two. Another time there was some icing. But usually it was only cold, and usually not much below freezing at night. So, you might have some snow, but most likely not much, IMO, but as others have said, you can't be 100% certain.
