Frankfurt morning departure – what to do?

I think most of the risk is in the Bamberg-Würzburg RB/RE leg -- absent labor action or a major breakdown the ICEs seem to run pretty close to schedule. In March my father was flying out of FRA but there was a trade show or something and no rooms were to be found under €200/night. He ended up staying in Aschaffenburg. That gave him an hour train ride to the airport in the morning. Neither Würzburg nor Aschaffenburg have that interesting a beer scene but it is better than you will find in a random pub in Frankfurt.
