Rotkraut, Blaukraut, Rotkohl and Rotkraut are different names of the same vegetable (Brassica oleracea convar. capitata var. rubra L.). The real colour is purple (in German: lila or violett). "lila" is a word which comes from arabia. In the middle ages this word doesn't exist in the German language. So the people use the colors red oder blue. This vegetable is more blue or more red, depending on the pH of the soil but also depending on the cooking (acidic ingredients like apples, wine, vinegar, lemon make it more red). The use of "Kraut" or "Kohl" is depending on the region. In the south states of Germany you say "Kraut", in the northern states you say "Kohl". You can get Blaukraut etc. also in the summertime, because many restaurants are using Red cabbage the whole year (canned or frozen food). |
