Forgot to note...just DON'T go with a German homebrewing book, even to practice your German. They'll have you using nappies (albeit new ones, not used) to lauter your grains and dumping boiling hot wort from one bucket to another to cool it. (Speaking of off-flavours.) Germans also seem absolutely obsessed with the iodine test, whereas I know of no Yank homebrewer that would bother with it. I leafed through a couple of homebrewing books at the local book store last fall and was schocked to see the prohibition-era (US) techniques being recommended!
