As Nick pointed out earlier a 'kellerbier' or Zwickel bier are really terms for the process than an actual style. Most important is no addition of CO2 beyond what is in suspension created during fermentation. So in that regard 'U' bier which stands for Undespundetes or "unbunged" can apply. I've seen the terms HefePils and KellerPils used in Germany. When I think of a darker version of Kellerbier at least in the Bamberg vicinity I think this segues into what most call Landbier. I have to say though that Landbier, Kellerbier and other terms have incredibly loose criteria. I the end it just matters if it tastes good. Todd |
