Heller Trum does step mashing by heating the mash tun (it is not properly called "infusion" because that is adding hot/boiling water to raise the temp). It's been a long time since I wandered thru the brewery at Spezial but I don't think they do decoction either. Off the top of my head I couldn't tell you a brewery that does for sure (though I don't doubt there are ones) -- most brew houses these days seem to be the two vessel style where only one is heated (mash tun/boil kettle). |
