Barry, the length of time that I lager a beer depends on the gravity of that beer. For a Bock biers I will typically lager for 3-4 months. For every other lager style, I lager for around 2 months. On a rare occasion if I'm in a rush to get the beer into the keg (to have it ready for a party) I'll cut the lagering time to 1 month but the quality does suffer a bit. I have found that the longer lagering times do improve the beer quite noticeably. Now the big question is, how are you going to lager? I managed it by purchasing a chest freezer and hooking it up to a Johnson Temperature Control device shown here: http://www.northernbrewer.com/brewing/brewing-equipment/fermenting-equipment/fermentation-temperature-control/johnson-refrigerator-thermostat.html If you're not able to do this then you'll just have to get it as cool as you possibly can. I generally lager at below 40 degrees fahrenheit. You may not be able to. Hopefully you have a cellar at least. I found my cellar temps are in the 50's during the winter. This works well for primary fermentation. New England is a good place to be a lager homebrewer. My biggest problem is that I brew so many lagers that I'm getting to where I need an additional freezer. It will be fun trying to explain to my wife how I've purchased an additional freezer and yet still don't have one that she can store additiional food in. I may have to buy 2 more. |
