Ah, Nick, different times! The first pub that I worked in (1965!) had such a set up. We never refilled a glass but not sure just how well the glasses were washed and dried, given that there were no glass washers in those days. The surplus beer went through an elaborate piping system back into the barrel, where, presumably it was able to ferment a little more, which probably destroyed any stray bacteria. Mind you, goodness knows what stray bacteria it brought with it! Now scientists say that our contemporary extreme hygene is not protecting us from various bacteria and the like, so maybe those people knew something after all!
