Real Zoigl (Ecvhter Zoigl) is fermented at each house as they please, so they could use any type of yeast they want. Having tasted a lot of them, I'd say most of them are bottom-fermented. Being unfiltered, the beers will often have a slight fruity taste. About using Bay. Anstich: it means a lot more work if you have to tap barrels each time instead of pouring from a much larger container. It often depends on how busy it is. |
